The Veracruz is organic roasted chicken dish served with two flavorful sides: salsa macha—a bold Mexican chili oil from Veracruz and Oaxaca—and seasoned ayocote beans, a staple of Mesoamerica for thousands of years. Rich in protein, fiber, and nutrients, this dish celebrates the resilience and rich flavors of indigenous recipes reimagined for today’s table. Served with a side salad jicama slaw.
Ayocote beans are large, hearty beans native to Mexico, known for their rich, nutty flavor and creamy texture, similar to kidney or cannellini beans.

How to Brew Tisane
To brew:
- Measure about 1–2 teaspoons of dried herbs or a small handful of fresh herbs per cup.
- Bring fresh, filtered water to a boil.
- Pour the hot water over the herbs and cover. Let it steep for 5–10 minutes to extract their medicinal properties.
- Remove the herbs by straining the infusion into a cup.
- You can add a touch of honey or lemon if desired but keep it mild to maintain the herbal benefits.
