Tagine is a flavorful Moroccan stew named after the traditional earthenware pot it’s cooked in. Typically made with tender lamb, sweet dried fruits, nuts, herbs, and aromatic spices, each region in Morocco adds its own twist, reflecting centuries of cultural flavors. It’s a rich, comforting dish full of bold, layered tastes.
Our interpretation includes chick peas for fiber and additional B vitamins, figs for blood-sugar regulation, and olives for vitamin E and healthy fats. The mixture is gently simmered in a sweet-and-sour base spiced with immunity-boosting spices of turmeric, saffron, ginger, and sumac.
Served with a bright arugula and cucumber side salad.
