The Village Golabki
Though their precise origins remain unclear—some food historians suggest an origin as far east as Persia—one thing is certain: golabki, or mincemeat-stuffed cabbage rolls, are a staple of Polish family life, particularly at Christmastime. Our vegetarian interpretation sources protein from green lentils, sweet potatoes, and pumpkin seeds. Antioxidants, vitamin C, and lycopene are provided by locally grown shallots, carrots, and tomatoes. And thanks to a carefully balanced spice blend including paprika, thyme, and caraway seeds, our golabki also feature the six Ayurvedic rasas.
