This organic-roast-chicken dish includes sides of salsa macha ("brave sauce"), a robustly flavored Mexican chili oil with roots in the regions of Veracruz and Oaxaca, as well as seasoned ayocote beans, which have been cultivated by the indigenous peoples of Mesoamerica for at least two millennia. High in protein, fiber, and micronutrients, The Veracruz pays tribute to the adaptability of indigenous recipes to regional agrosystems.
