From Kurdistan With Love
Our symphonically flavored chicken biryani is an ode to the culinary traditions of the Kurdish people, an ethnolinguistic group indigenous to Kurdistan, a region of West Asia encompassing portions of modern-day Turkey, Syria, Iraq, and Iran (also known as Persia). Typically associated with Indian cuisine, biryani (from the Farsi birinj biryani, or “fried rice”), a multitextured medley of savory rice, dried fruit, toasted nuts, meat, and spices, is believed to be the product of ancient Persia, and is today prepared by Kurds for special occasions such as weddings. Laroot’s mission is to present biryani as authentically Kurdish as possible, at a moment when Kurdish identity, language, cultural practices, and self-determination remain under threat. Our biryani rice is studded with Yukon potatoes, snap peas, dried apricot, and almonds for fiber, folate, and vitamins C and E—all seasoned with our micronutrient-rich spice to cover the six rasas, or tastes, of Ayurveda. Free-range organic chicken, roasted with onion, garlic, and ginger, supplies abundant protein and all nine essential amino acids. We garnish our biryani with a tangy, refreshing mast of probiotic Greek yogurt, turmeric, lemon juice, and parsley.
